| Joe -they're like hamburgers, except made of ground salmon. You can buy them pre-made; Costco (a warehouse club like Sam's) has good ones. Ann has a nice photo on page 5 of what look like homemade ones. |

| Cheater's Chicken and Broccoli Casserole for One (in memory of our Dick) I used a store-bought rotisserie chicken, pre-chopped veggies, broccoli from the salad bar - all from the local supermarket down the street; and cheap canned cream-of-chicken soup and grated parmesan from the Dollar General across from my subdivision. Added some whole wheat breadcrumbs from my freezer (I make them from ends of bread loaves and keep them there), more cheap grated cheese, and paprika from my spice rack to make a topping with some color so I could nuke it rather than bake it (It's too hot today to use the oven). And I don't even feel guilty! Ann |

| I've had a "healthy burrito" made with all whole foods, vegan, in my freezer since I don't remember. I cooked it in the microwave for lunch and ate it quickly before it turned to stone. Some of the edges turned to stone anyway... |

It would never occur to me to feel guilty about using packaged food. I know a lot of women feel this way, though. I love grocery store rotisserie chicken. I also love high-quality packaged food. I don't think homemade is the gold standard. Of course the main advantage with homemade is that you always know the ingredients, but labels on the packaged stuff help with that, too. BTW, the tacos and chips look great! |

| Store-bought rotisserie chickens are the best!! I've recently re-upped my subscription to a website called Relish! The bean/corn tacos were one of their offerings. For a very low monthly fee, they send you weekly menu ideas, and offer a place for you to keep your own stuff. Then you can bounce your weekly plans to a free iphone app, with a customizeable shopping list. Tonight I made a slightly altered version of their Corn Fritters, Roasted Tomato Slices, And Kale recipe: I used collards instead of Kale, used a packet called Kornkits to make something more like corn cakes than corn fritters, and added some white beans and bacon. Phil Whitley's wife, Reba, has the world's best cornbread recipe, but a packet of Kornkits comes close, and is fast, adaptable, and mistake proof. This is all on a salad plate, BTW. Ann |

| Mexican Stuffed Peppers. Mostly left overs that I had frozen.
2 Bell peppers, cored Grated cheddar cheese Left over taco meat (Mine was cubed pork with tomato and green chili, a little taco seasoning, a few left over pinto beans, diced tomato and spanish rice, left over of course. A jar of my home made salsa.
Peppers Cheese in the bottom a couple of spoons of taco stuff pressed down A couple of spoons of rice pressed down Cheese pressed down
Repeat
Top with cheese and a dollop of salsa. Put remaing rice around Add what cheese is left to the rice and dollops of salsa
Cover with foil and bake for 30 min at 350 Take foil off and bake for 15.
This is a great recipe for making more and freezing. The reheat is just as good, maybe better.
I would have taken a picture, but it is all gone.

| May I print that? I would like to try it. I would make it with some leftover pork tenderloin from yesterday's dinner, only there wasn't any tenderloin left over, so I would like to save it for later.

| Those peppers do sound great. How do you cover with foil, do you wrap it shut around the whole pepper or just lightly put a piece over the top? |

| At last I have found a soup that is like homemade, only without so much salt and organic ingredients. Tabachnick frozen soup has two servings per box. I just slice an x on the plastic bag, put it x down in the bowl and micro for five minutes. The soup falls into the bowl and is exceptional. It's made with only real ingredients. Anyway, I'm on my way to homemade soup now. Those waffles look good though, take me back to childhood. |

| I agree with that "Whole Paycheck," lol! That's where I first found this soup - then I found it at Sweetbay. At Whole Foods, it was $2.56 per box. At Sweetbay, it's $1.46. :-)
I love shopping at Whole Foods and at Fresh Market. In California they had a store "Poor Boys" for fresh fruits and vegetables for which I've never seen the match in taste or quality.
I've learned what to buy at Whole Foods and what to buy at Fresh Market - and #1 rule: go with a list and stick to the list!
Whole Foods 365 brand has some products comparable in price to regular supermarkets such as soy milk and soy products, some even less. Also, their unsalted sunflower seeds (365 branded) are comparable, maybe even a better buy.
I was determined to eat hummus; and I don't like it. I paid a big price at Whole Foods to get the "best" to try - and now it's going to be wasted. |

| Tonight I made Tinga de Pollo (Mexican Chicken Stew) ...a much bigger pot tonight. We had extra guests - son-in-law Chris's sister-in-law and 5-year-old nephew. Chris's brother was at home studying for his doctorate of divinity. He is a very cool guy. He and Lynn met at undergrad school when he was 19 and she was 21. They immediately recognized each other as kindred spirits. After a while, he told her - you should meet my older brother. He told his older brother - you should meet my friend at school. Long story short, they met and now have been married almost 20 years. This was my first time to meet his wife and son. Son is just like his father. I told her tonight how this dish cures any illness. It has been doing that for me for some years now. I've posted picture and recipe before so won't go into it now, but it not only tastes good, it is as healthy as anything you could eat. Ann |

| Well, my neighbor went on vacation and gave me her leftovers: a couple eggs, a bag of spinach, a great pepper, some carrots and cottage cheese.
I steamed the spinach, pepper, carrots and onions. Then I put them in an egg omelet. I added the carrots and cottage cheese. I don't have the knack of taking a photograph, but it was a grand, colorful meal from just a few pieces and flavored with pepper, garlic, olive oil and a bit of parmesan, also delicious. |

| I think it's a hoot also, especially since I don't cook. I was quite proud of my ability to turn a few scraps into a bountiful meal. She's like me, waste not, want not. We got that from our mothers who lived through the depression.
My grandmother's farm was a stop for the hobo train; I heard she could turn a meal for three into enough to feed as many men as sat quietly on her stoop as the word spread that quiet men would be fed when her family was done eating. Mysteriously, things broken on the farm would be repaired, a field of corn picked and stored, and anything else the men saw on their way to somewhere in search of work. My grandparents had no money like everyone else, but they had a garden, a few hogs, some chickens and acres of field corn, cotton and cane that no one would pay for. Hard times teach the value of a piece of spinach floating in a watery soup and the virtue of a an egg. Good food is not thrown away. |
