| Some southern cooks consider the making of cornbread an ingrained art. I am not one of them. I like cornbread that tastes good without having to grind the corn myself. Jiffy Mix corn muffin mix is my favorite. You can add stuff and it always comes out.
Today, I sliced three red jalepenos, seeds and all, three green jalapenos, seeded, one package of Jiffy Mix, two eggs (small because Margaret lays small eggs) 1/3 cup of milk, mixed it all up and sprayed the little loaf pans ( I get those foil pans that have three sections so you can bake two small loaves and one medium loaf in the same pan) put in the mix and baked. It was the best cornbread I have ever eaten. So there! Love, Betty |

I have started using a Jiffy-like mix by Bob Mills, as it is gluten-free, using soy flour with the cornmeal instead of wheat.
Last weekend, I decided to pull everything out of my kitchen cabinets so I could clean the shelves and see what I had hidden in their dark recesses. I found a pan for making mini muffins. It is now my cornbread pan. Each little muffin is about an inch-and-a-quarter around, with a puffy top that makes it almost round, with crust on all sides.
I think, for Thursday, I may add jalapenos.

| Thanks Ann, If you are making those little mini muffins you may need to chop the chilis a little smaller than sliced. Add an extra egg, too. (small)
Those mini muffins are so cute. I can eat them one after the other like chips.

| Tonight we grilled hamburgers. I made potato salad and cole slaw and beans.
The buns sucked.
We used lettuce leaves as buns, put in the tomato and onion and burger, added salt and a little pepper and a dash of steak sauce. To me, it was the best burgers I have eaten in a long time.

| Reposting pic from What did you buy today. Won't do anything special to the sausage, just pan-fry them as they are with a few fresh mint leaves sauteed in the pan juices and sprinkled over. Found a rocket and butternut squash recipe at www.nibbledish.com and just happen to have a can of black beans on hand. - Quote :

The appetizer will be fresh radishes, leaves left on for garnish, to be dipped in soft butter and finely ground seasoned salt (a gift from Lyn (Jaycie's mom), who brought the Greek Sea Salt, blended with assorted peppercorns and dried rosemary leaves, back from her trip) It is going to be a fun 69th. | I love radish. These hydroponic stacks grow radishes the size of large turnips. At first, I was dismayed. But then, I decided to try them sliced and stir fried. Awesome addition to a stir fry. If you get regular size radish, (no matter white or red) and slice them up and add to any stir fry, it will enhance the spicy part and the crunchy part and surprise your mouth. I love that part.

| Another Jiffy Mix recipe.
I have tried all the store bought mixes for hushpuppies, I have used from scratch recipes and mostly they all come out like a little wad of browned cornmeal with a lot of grease.
Tonight, I mixed a package of Jiffy Mix with 1/4 cup of House Autry chicken breader, two small eggs, 1/3 cup of milk, 4 grove peppers sliced, 1/4 cup of diced onion and used my deep fryer to cook. Absolutely awesome. Light and fluffy, tasty and spicy, not heavy at all. I cooked the whole recipe and put them on paper towels. Then, off into the oven at 170 to keep them warm. I believe I can freeze these. I will try it.

I will let you know about the freezing of them. If I had any jalapeno this night I would have chopped those. The grove peppers are like little tabasco peppers, ...hot as hell..and I grow them as an ornamental hedge. I pick the peppers and put them into apple cider vinegar for my David who loves that on greens or spinach.

| As an afterthought, If you would like some seeds of the grove pepper, I could mail them to you. The grove pepper grows wild in the orange groves in Florida. I use it in Thai cooking and as an addition to a recipe that needs some heat without a lot of evidence of pepper. They make a nice ornamental plant, as well, and will grow almost anywhere, given a little water and with a little trimming, can be a lovely little bush of red and green peppers.

I will send you the red peppers so you can just put the red peppers in a pot, cover them will a little soil and keep them damp in the sun and soon,,,,,,,you will have bunches of little pepper plants sprouting up. You can let the strongest ones grow and give some of the other sprouts to friends. I love that.

| I love Hominy. It is a kind of mystery food. It is one of those dishes, like Rice-A-Roni, that I cannot get enough into my mouth at one time. I love both. | Dear Don, One of the nice memories of my youth was Enid, Oklahoma. On my walk to to the school, I passed a large bread bakery. I was always starving. The smell of that bread cooking will never be forgotten. Wonderfull. It may have been Wonder Bread bakery. I think a person could give up the turkey and the ham and just have home baked bread and butter and be thankful enough. Love, Betty |

Betty Hominy is an almost perfect food. Rick Bayless (my fave Mexican food chef) says it is much healthier than "sweet" corn. Don't know if I believe that - I've lived on corn and cornmeal most of my life, both varieties. My personal faves: Grits and posole (not together). Maybe I will make posole for Thursday dinner. If it weren't so close to Thanksgiving, I might make some shrimp(sauteed and simmered in a gumbo-like roux) and grits or grillades (tenderized steak strips simmered in a gumbo-like roux) and grits. Grillades ( gree-yahds) and grits are traditionally served on Christmas eve in Louisiana (and southeast Texas). Here in SA, Lynn will be having all her combined families over for homemade tamales - also from hominy. Funny how traditions overlap. Did any of you know that the spell checker thinks that when I write grillades, they think I meant to write Everglades? Guess Florida is a special place. Lots of good people live there, for sure.
