What are you cooking for Easter ?

Me, Ham glazed with pineapple, brown sugar,
cloves. Mash Potatoes, Vegetables, Rolls,
desert.

I would like to know what is the best ham to
buy ? Any suggestions ?

By order of the family - Tinga de Pollo (Mexican Chicken Stew)

This is my children's favorite. I asked what they wanted, and got a single resounding answer. I'm happy. It's one of my favorites, too, so I decided to practice this morning, and have it for lunch. I had some leftover chicken and the other ingredients are all staples. Recipe below picture.

WHAT ARE YOU COOKING FOR EASTER ? Cookingtinga
olive oil
diced potato
diced onion
diced bell pepper - all colors
chopped peeled garlic
diced chicken
canned diced tomatoes, drained (save some juice)
canned chili in adobo sauce
dry white wine
chicken stock
fresh herbs (of course):
parsley, sage, rosemary, thyme, oregano
salt and pepper
flour and/or corn tortillas
condiments:
shredded cheddar
diced avocado
sour cream
pico de gallo (chopped fresh tomatoes, onion, jalapeno and fresh cilantro)
additional fresh cilantro leaves

Saute vegetables, adding to pan in order listed, in olive oil until tender; add chicken; add tomatoes with a little juice, cook down; add wine;cook down; add chicken stock; cook down; add herbs and stir in.

You want a thick stock with little liquid, but you want the herbs to stay fresh, so don't cook long after you add them

Serve the tinga with the condiments, wrapped in tortillas.

Looks fabulous, Ann. I can't handle cooking anything with more than three ingredients, though, so I will just admire the pictures. Smile

BTW - the chipotle is a smoked jalapeno, and quite hot, so use sparingly, or if you are a total wimp, just season the dish with a teaspoon of the sauce.

LC, you might try some shredded rotisserie chicken with some stewed tomatoes and a little chipotle.

I use whatever I have on hand.
