| Tinga de Pollo - chicken simmered with potaotes, tomatoes, onions, garlic, bell peppers, and chipotle peppers, with fresh or dried herbs: Parsley, sage, rosemary, thyme, and oregano; traditionally served in Mexico and the Southwest on El Dio de los Muertos, or The Day of the Dead, but you can eat it any day. http://en.wikipedia.org/wiki/Day_of_the_Dead It can also be made with beef, pork, or simply vegetables. This is a small pot, cooked just for me in my own kitchen. It will cure the flu, or whatever cold weather condition that bothers you. And in the summer, don't worry about the heat, just add a little extra crema (Mexican version of creme fraiche) or sour cream. Ann |

| Beans. They are the perfect food. They kept me alive in my growing up. They have all the essentials, vitamins, fiber, carbohydrates, protein and come in many varieties, grow anywhere, are easy to grow, can be dried and stored for years, can be eaten green and raw, canned, used in soups and thanksgiving casseroles. | Just finished a pinto bean dinner, Betty - borracho beans and corn tortillas (legumes and grains form a complete protein so you don't need meat). borracho is Spanish for drunk, E.g. drunken beans. Most people make them with beer. I make mine with white wine.
