It's scheduled to hit 101 this afternoon I'm fixing a cold dinner for everyone - an assortment of salads.

| Happy Birthday, Annie! You are almost as old as me and that is a wonderful thing. I hope your day was as beautiful as your heart and soul. If I were there, we would share a glass of your choice of wine or champagne (which makes me forget may name) and have the crab stuffed fish filets that I made for dinner. Along side is a light maccaroni salad and David's choices, creamed corn (his favorite) home canned baby lima beans, sliced cucumbers and tomatoes with rolls (gotta have bread) and my choice, baby collard greens. Today was the the beginning of a new decade for you. I love the decades. Ten years goes by too fast. I hope that when we both turn 80 that we can meet each other in person and that you have the fame you deserve, not just as an author, but as a beautiful person. Happy day, tommorrow, my friend. I was at a meeting where a man's son lives in Nevada. He said they cool the pool instead of heating it. That's a story, isn't it. |

Love, Betty Umm, yum. Lynn and Chris brought both champagne and a nice Argentinian red. I made a chicken "salad" that was a staple of my mom's. She had it one day at the restaurant on the top floor of Sakowitz in downtown Houston - her fave place to shop. she came home convinced that she could figure out what went into the dressing - and did. The salad consisted of a layer of shredded lettuce with a sliced, poached chicken breast on top and a drizzle of what she determined to be a mixture of mayonnaise and heavy cream, with a small amount of dijon mustard. Tonight I used a whole Bistro chicken (pre-cooked; see earlier food posts), with slices of avocado and that same dressing. The organic produce section of my favorite supermarket had a bag of six mini-heads of romaine lettuce, each about 4 inches high. I took the 6th and shredded it to make a bed for the chicken. The other five, I just halved and drizzled with an Asiago Caesar dressing. for a red veggie, I made Chris's fave: Rachel Ray's tomato and onion salad (chopped plum tomatoes and onions with olive oil and balsamic vinaigrette). They are still doing paleo, so instead of birthday cake, I did this thing that the closest friends of me and my ex's used to do years ago. It is still one of the best desserts ever: Whole strawberries w/ stems in a large bowl; in three small bowls around, have sour cream, brown sugar, and coconut. Dip the strawberries in each - start with sour cream, move to the brown sugar, and finish with the coconut. Total heaven. |
