Going to Lynn's tonight. It's her mom-in-law's birthday. I am making Linda's favorite, Rick Bayless's guacamole to take as my food contribution
3 peeled and seeded avocadoes, coarsely mashed (save seed)
1/3 cup finely diced red onion, soaked in ice water for 1/2 hour, thoroughly drained
1/2 cup finely diced sun-dried tomatoes, reconstituted and thoroughly drained (or, if you can get them, the partially dried version in a foil bag - like they do dried fruit)
juice of one lemon
1/4 cup chopped cilantro

Mix all together and put in bowl with seed in center; cover with plastic wrap, leaving no air inside; refrigerate until serving time, remove plastic and seed and serve with unsalted tortilla chips.

Lovely gift you are giving.



I found that gucamole freezes real well. Do not put in the tomatoes until it is thawed and ready to serve. For just David and I it works out fine. I notice no loss of flavor or consistancy.

Good idea about freezing guacamole, Betty.

As far as the gift, it was so simple. I had the pics in my computer already, and several sheets of leftover magnet-backed paper left over from making A Myth in Action ones for book signings, so it didn't cost me anything but about an hour of time.
