A little boy goes into the candy store and asks for a "male chocolate Easter Bunny."
"What's the difference between a male and a female chocolate Easter Bunny," the clerk asks.
The little boy holds his thumb and forefinger up. "With a male chocolate Easter Bunny, you get this much more chocolate."

Well, I was going to show you a step-by-step prep for our Easter dinner, but we had a much-needed thunderstorm while I was in the process. I did manage to get this midpoint pic:



The storm was severe enough that I wasn't sure how long I might have power, so I had to focus on cooking quickly.

I first heated the pre-cooked ham for an hour, and in the meantime, nuked the squash wedges, as you can see in my only pic.

When the ham came out of the oven, I mixed the pan juices with honey and frozen OJ concentrate (you can see it in the measuring cup), and nuked the squash wedges until they were tender. I adapted a Martha Stewart recipe for the squash - here is her pic:

She baked the squash with shallots and rosemary,; I sauteed mine with garlic and rosemary.

Lynn had suggested mustard greens, so I used my mom's recipe for mustard with onion and bacon.

I drizzled the ham with the orange sauce, and reheated it at the last minute, then served the pan juice as a gravy.

Our first course was a dip of artichoke hearts and spinach with crudites ( sorry - no pic).

Everyone seemed pleased, so I am satisfied.

It was a fine conclusion to a Happy Easter - wish the same for all.
