| It was raining today; misty, cold, north Florida rain. I had to run errands, and felt pretty dismal by the time I finally got home from work. Then, I got a call. I've been invited to be the guest speaker for a luncheon heralding women volunteers. I really like speaking to groups. I tell "your-mama-and-'em" stories, get a few laughs, and end up really enjoying myself. What fun! Makes me want to butter up a big cathead buscuit and coat it with cane syrup! that...or eat chocolate... |

| So sorry, Abe... I forget everyone is not familiar with our Deep South ways. A cathead buscuit is a buttermilk buscuit (made with lard) that is formed by hand. When cooked, it is as large in diameter as a cat's head...thus the name. The sign of a well-made cathead buscuit; you can slather it with butter, and drag it through thick cane syrup, and it holds together. One cathead and you're not hungry until well into the afternoon. Of course, now we make buscuits without the lard. Too bad. The ones made the old-fashioned way were just delightful! Hope this clears this up, and you don't think we eat our pets here in the Southern U.S. |

| Rhett, it cleared it up just partly. Am I to assume that a buscuit is the same as a biscuit? No, I didn't imagine it had anything to do with a bus, but then again I must remember you're from the south. |

| Okay...so I checked my bisquick box...and, I checked my aunt's old handwritten recipe..... surprise, surprise...I'm not going nuts, completely....and, behold! The spelling mystery is solved. Yes, it is spelled biscuit...yet, on my auntie's card, it is spelled buscuit. How funny is that? The sad thing is that I had not noticed this before. Geez. I asked my mom today, and she told me the same aunt also called muffins made with cornmeal, "muskits". Now, where that came from, heaven only knows... |

| Sounds like Louisiana, where I was raised. Everything was made with lard or bacon grease. Although the dishes were wonderful, I never learned to cook until after I was married.
One day I decided to try to make biscuits like my grandmother. She made them twice a day for most of her life, and I dearly loved them. Mine, tho, turned out like rocks, and when I dumped them into the garbage, they made such a thud that my husband came running into the kitchen from the back of the house. He'd heard the noise and thought I'd fallen. Then, thank goodness, I discovered Bisquick.

| Ah Brenda, sounds like the first time I made bread. Newly married and out to treat my husband to fresh bread, I pulled out all the stops. Apparently, I killed the yeast. The stuff never rose, and I figured that I should maybe try to slowly bake it and even if it didn't rise, I could feed it to the birds. The birds, being much smarter than I, wouldn't go near it. Now I buy it at the store. For me, it's all about supporting local small businesses. |

| Rhett, I hope you understand that my comments were not intended to disparage. I know you as a very funny person always ready with an amusing remark. At first I thought the spelling you made of that southern delight was intended as such. I tried to find that smiley face when I made my last remark and couldn't find it. What you have brought to my attention are cultural differences that also apply to spelling - spelling things the way they are pronounced. There are things such as that from Pennsylvania that I remember as well. As writers, usage of colloquailisms helps with character identification. |

| You are so right Abe - I think the use of colloquialisms are a big part of what we can do to bring a story to life (and typos can just make them so much more fun)!I remember the first time I had an argument with a teacher (gulp!). I was in grade seven and had written a story for an assignment. It featured my family and having lived in England for a short while. I referred to my mother using the English spelling "Mum" just as I did at home. My teacher deducted marks because I spelled it wrong throughout the story! I argued that my parents were English and so really, it was correct. She did not deduct marks from kids who referred to their grandparents as Oma and Opa instead of Grandmother and Grandfather. She wouldn't relent. I count that event as the one that kickstarted my hobby as a word nerd. |

| Pam, yes dog nuts is what I was thinking of. Not particularly appetizing in my opinion. Rather like Rocky Mountain Oysters. There used to be a shop in Seattle called 'Spud Nuts'. They made the best doughnuts using potato flour. They were just about the best in the land. My state (and a good part of the country, it seems) are out to eliminate anything that people ingest with fat, starch, sugar, and lots of other things that make foods appetizing. I expect that any day now they will be outlawing Apple Pie and Ice Cream. Then it will be pizza and chocolate cake. The food Nazi's have apparently taken over! I love fresh biscuits, but have never truly mastered them. The breads I made years ago were absolutley wonderful. It was one area that I strictly adhered to directions, and maybe that is why it always came out good. Then life got busy, and breadmaking was put on a shelf. I was given a bread machine, but have not had much luck with it. Maybe the yeast is wrong. Hmmm... Maybe I need to try it again, you have me drooling at the thought of fresh baked bread. Just don't tell the food police! |

| Your secrets are safe with me Zada! I grew up on the prairies and we used to refer to Prairie Oysters (cow poop). There was a bakery nearby that made potato bread that was so delicious - especially warm and with real butter. I too miss all that yummy stuff -- and I have even tried the low fat/no taste/ no sugar versions, and they have been consistently disappointing! Rhett I would love to try your recipe for biscuits - my daughter loves stuff to mop up my homemade stew (where I sneak a lot of veggies). And as a tradoff we use real butter on the biscuits |
