| I am trying to learn every thing about the commercial production of spinach. I consider that our hydroponic system is perfect for the growing of it. It is the marketing/packaging part I am worried about. I find that only one farm grows spinach for commercial sales in my area.
Off I go into a new learning experience. Any knowledge passed my way would be welcome.

| I buy the big, plastic box of baby organic spinach from Sam's - triple washed. I love it. I don't have a clue how they get it washed and into those plastic boxes. The stuff at Publix is in plastic bags. |

| When I was a kid, I hated spinach. My mother cooked the hell out of it, added speck and it became stringy. Also, cooking spinach shrinks it to almost nothing. Today, we use spinach in salad. It tastes great.
Spinach does well in cooler climates. Conditions for planting are similar to other salad plants, i.e., avoiding areas with direct sun all day. |

| Are you thinking of mostly producing the baby spinach, the full grown leaves, or both? How does that work commercially? |

| Baby spinach is all the rage. It is a snob thing. The truth is that big leaves of spinach taste just the same. It is like the niche of baby squash, or baby cucumbers, or anything baby. Some things like cucumbers means there are no developed seeds. But spinach is spinach (in my humble opinion). It does not get tough like collards, or other greens. It melts with the slightest heat and water. It is a beautiful vegetable for vitamins and anti-oxidents.
For that matter, Swiss Chard is a close taste. But it has not been marketed like spinach....(the marketer of spinach is a genius, by the way)
I have discovered so far that spinach seeds do not like to sprout when the temperature is over 68 degrees. Once sprouted, however, they will grow. If the weather is too hot, they bolt (go to seed) but a spinach plant is good for around 45 to 50 days in the winter.
This year where I live, the nights have been condusive for sprouting.
I am still learning about spinach.

| I am a snob. I like baby spinach and baby lettuce. When I picked it from the garden I know it was sweeter. Baby spinach leaves are thinner in texture than mature leaves. It also cooks quicker (which is instant in any case).
There's an organic thing in Naples. For a flat monthly fee, you buy a box of whatever is in season and organic. I have friends who say it turns out less expensive than the store because they try new seasonal things instead of imported stuff.
The owners simply put together the boxes and deliver them on a route and still manage to make money. Maybe you could do something like that.
It's all marketing from what I see. I think they have a web site. I'll try to find it. |

| I just had a memory flash of the first holiday at home after David left for college. One of the dishes I had fixed was a platter of roasted baby vegetables. David said their ought to be a SPCV group to go with the SPCA. I wasn't quite sure if he was joking or not. He did insist that we should all stop eating veal. All babies, he said, have a right to grow up and be properly nourished. |
