| When I first came to Florida in 1971, there was no Taco Bell, no tortillas to be had in grocery stores, no green chilis in little cans, no well stocked jalapeno bin in the vegetable section, and certainly not an Hispanic food section. I have looked around this internet to find who produces fresh or dried pinto beans in the Southeast US. I have not found anyone. Lots of people grow jalapeno peppers. Off I go! Testing a market for fresh Pinto Beans in the central and southwest of Florida. Any advise is welcome. Love, Betty |

| It's hard to find fresh pintos in Texas, Betty. I remember when you couldn't buy limes in grocery stores, either.
I remember watching a show on the food channel that was focusing on recipes from the White House, and the cooks on that show couldn't understand why the Bushes' recipe for guacamole was made with lemon juice. My mother's guacamole called for lemon juice as well. Until fairly recently, it was all we could get. I still like my guacamole better with lemon juice than lime.
In the meantime, if you can get canned pintos, try draining a can; reserve the juice; blend the beans, and add enough juice back for the consistency you want.
Or, for borracho beans, saute some garlic and onion in olive oil or lard (which nutritionists are now saying is less harmful than vegetable shortening, and fine in small amounts), add a few canned tomatoes, some jalapenos, and beer. When the alcohol in the beer has cooked down, add a can of pinto beans.

| Dear Ann, I am a pinto bean lover. I can what I grow. Some as chili beans and some just the beans. Picking fresh pintos is like picking green limas. I was looking into how to best freeze them for marketing. It looked fairly simple. It is the county and state inspections that make the project go forth, or not. I was looking at this site. http://thepintobeanerycompany.com/ I know he is much larger operation than I am. I am assuming that he has a big buyer for the mass of his production and this website is just to sell off a little bit and make him some under the table cash. I am just looking for markets. | Dear Joe, I have planted most of the farm in pinto beans. They are just starting to flower. It will be another month before they are ready. This year is my test year to see if the Hispanic population here is interested. I have some thoughts on marketing but marketing is my undiscoverd talent. Love, Betty |

I think you'll hit pay dirt ! Here in New Mexico that's all I hear about is Pinto Beans, it's a big thing in the Hispanic culture here, me I love black beans and rice..GOOD LUCK ! I never tried pinto Beans , how do they taste ?

| Thanks everyone for the encouragement. My mind is whirling with possibilities, large and small. Here in the South, every convienence little store sells Boiled Peanuts. The peanut vendor boils the peanuts and bags them, freezes them, freezes the boiling water separately sells those to the convienence store. He also provides a large crock pot and a ladle. The stores sell them by the stryofoam cup (lg, md, sm). One idea I have is doing the same thing with pinto beans. The migrant workers would buy them right along with the fried chicken that is offered by the store. I could cook the beans in my pressure cooker, season them with jalapeno's et.al, and be the first pinto bean provider in Westcoast Florida. The mind boggles. Any ideas are welcome. Love, Betty |

| Betty, your excitement/enthusiasm is contageous. I think that creativity is the best marketing tool. And you have it. I don't think there is a perfect method. Finding what works with a new product or idea is best done by trial.
Getting feedback from your customers can help fine-tune your methods.

I wish I had some of your beans. I am in the process of reconstituting dry ones right now. In a few minutes, I am going to saute some coarsely diced onion and some green bell pepper with a little crushed garlic, in olive oil. When the veggies turn translucent, I will stir in some ground cumin and pour in some Shiner Beer. (A SA brand. I hear it is now available in other states.) If you can't get Shiner, any good blonde or amber beer will work. I happen to have some light blonde on hand because that's what my son-in-law is into right now. I will simmer the stuff until the beer is reduced by about half, then I will add some salt and pepper, several cups of water, a can of diced tomatoes, and the reconstituted beans, and simmer them about 2 hours, or until they are tender. It will probably take less time with fresh ones. For people who like their beans hot, you can use a mix of bell peppers and jalapeno or green chilis. You can also add chili powder to your taste.
I'm not giving amounts because it will depend on how much the beans expand while they are soaking. For two cups of fresh beans, probably about a cup of onions and peppers and one small can of tomatoes, and between 1/2 to 1 bottle of beer.
Let the finished beans simmer until they are very soft and the broth is thickening a little.
This is my Borracho Bean recipe. In Spanish, borracho means drunk - hence the beer.

| Dear Ann, I have copied your recipe. I will put it on a recipe card for the store to put in front of the beans....if they buy my beans. I have blanched and packaged 26 pounds of beans. I have the label which I consider needs acrylic spray to keep the ink from running, I hope. Off I go into the world of vegetables no one ever knew they wanted. I have taken today off to water all my house plants, my porch plants, feed all the critters and give my finger a rest. Tomorrow, I will clean my house and Wednesday....back to the farm. | An Update: Pinto beans are a prolific producer of the perfect food. I have picked, dry and fresh, frozen and put into bags. I have only begun this harvest of what was produced by one pound of beans planted. I anticipate over 100 pounds of dry beans. I am one person, it will take me a long time to do all the harvest although it is only seven 75 foot rows.. What I wondered is if I walked along the barbed wire fences here, planted beans on the side that the county maintains, but close enough to the fence that they could not mow it all down, if one day, when some hungry people needed the beans they could walk down the road with a bucket and harvest enough for their family to survive. I must be insane about this. No one else can see it. Love, Betty |
