I am curious as to why these folks are left out of the book? Joe is in and his format is the same.

No one is left out, Alice. Formatting a book takes a great deal of time. Throwing out recipes is only part of the work required. I need original material written by the contributors. The ingredients for all recipes are pretty standard, but readers who enjoy reading about food preparation are looking for information that they can't find in other cookery books.
This is the kind of thing I'm looking for in written form:

Joe,
I posted a video, but it isn't loading on the forum. Click on this link to view the video:

The recipe is for a simple pasta sauce, but the explanation is about the ingredients and the way they are selected and used in the making of the sauce.
I suggested to Ann that she should put together the posts on her thread into a book, which she could then give to her daughters. Whole threads have been copied and pasted onto blogs without my permission, but I would gladly give Ann permission to copy the whole thread or parts of it onto a blog or website.
I assume Ann thought that it would involve a great deal of work (which it would!) to organise all the posts, including photos, into a book. Involving the members of the forum would perhaps lighten the load and make the project more manageable, especially if I were involved and agreed to be the publisher.
I'm happy to put together all Ann's Thursday evening recipes into a single volume, and I think that might be the best solution. When everyone can see the result of collating and publishing the recipes, they would be in a better position to judge whether a book involving members of the forum would be a viable project.
