What do you guys do with yours?

Stopped work to check out my fridge this morning.  I try to do my main shopping for the week on Tuesdays, so Mondays are always about "making do," as my Uncle Feagin might say. (Flashback to late 1970's, sitting at Mom's DR table (now mine - gave old set to Lynn and Chris as my little SA house could not support it.) Dinner is done, table cleared, and the Scrabble board has come out.  A few minutes into the first round, Uncle Feagin says, "Time to refill glasses, folks.  Etnie (his nickmame for my mom, Edna Earle) is trying to "make do."

Managed to "make do" fairly well today.  Found in fridge: a couple of the Cranberry Pork sausages from last Thursday's family dinner - precoooked and still quite viable;  several crinkle-cut slices of sweet potato from local market's pre-prepped aisle; about four Brussel's sprouts from a bag I opened a couple of days ago, still well w/in freshness date; One-half a red onion, and two small but quite firm and fresh figs from Thursday's dinner. Also had a new loaf of Orowheat's Oatnut bread.  Looking through the fridge, I found a bottle of Stubb's BBQ sauce.

FYI:  Stubb's is a well-known Austin hot-spot which serves up barbeque with C&W/country rock music.   It has an outdoor theater with a capacity of 3000. and back in 2000 and 2001, sponsored several sold-out performances for an Aussie rock group known at the time as Thirty-odd Foot of Grunts, and whose leader and singer was a suddenly popular and acclaimed actor named Russell Crowe (Gladiator was released  just before the 2000 shows.

But back to my leftovers.  I have just finished a meal of a BBQ pork sandwich with a large salad of caramelized onions, figs, and sauteed slivered brussel sprouts with a home-made vinaigrette.

Alas, too bad you are so far away.  Those are good leftovers to share.  I have some frozen bits of chicken.

I could use some magic for the chicken bits.  I make a casserole with green beans, broccoli, chicken, mushroom soup and scalloped potatoes with fried onions on top.  For seasoning I add onions, garlic and black pepper.

I'm open to another tasty type of casserole.

Mom and Lynn have variations of a hot chicken salad that are both very goood, and on the same order as the one you mentioned, which is an old fave of mine.

Both start with leftover chicken, add sliced water chestnuts, sliced mushrooms (canned or fresh), diced pimiento, sauteed onions, and slivered almonds, topped with grated cheese and canned french onion rings.  Mom's recipe used mayonaisse to tie it all together; Lynn lightens it with a quick white sauce made with skimmed milk and a little flour.  You could also use creamed soup: muchroom, chicken, or even celery.

Personally, I prefer the mayo version.

If I lived alone, I  would find cooking a challenge. Even cooking for two, David and I, there are so many left over.  
I had a friend long ago, who was elderly and lived by her own self.  She never had company.  What she did was make a large casserole (stuffed peppers, for example) and had them all week every night.  I would  find that boring.

I am not a big eater.  I could make a salad and be happy.  Or a bowl of soup from a can with some crackers.  I could just eat a piece of pie and whipped cream...I am easy.

I have chicken salad I need to toss (can't freeze it after it's getting old) and some green been casserole.  I hate to toss formerly good food, but getting sick isn't a good idea either.  Just could not eat any more of either.

My microwave is out of commission so that puts a crimp on some things that work well for small meals.

I hate to toss good food either…. Therefore, I normally put leftovers in the fridge, before they deteriorate. In this way, we not only save money and food, but also have some healthy snacks for the office or when we get hungry all of a sudden
